Mosaics! Make a mosaic! The most famous and well-known Byzantine art is a mosaic—Cut out little bits of construction paper in similar colours, and glue them down to make shapes.
Byzantine art focused on very formal, stiff figures and religious art. Some good examples can be found from the Mosaic art school in Ravenna, Italy, and from Byzantine art decoration in the same city.
